Early autumn is all about apple and spice for me. This apple spiced loaf cake full of cinnamon-ey goodness is what dreams are made of. Getting the very most out of our delicious apple harvest is such a treat. My favourites are pink lady or discovery, the pinker the variety the better in my opinion.
When all you want to do is cosy up with a cup of tea and something delicious, this cake will hit the spot every single time.

You can enjoy this cake freshly baked with a warm drink, as a pudding with vanilla ice-cream or even as a weekend breakfast smothered with peanut butter! This cake will travel well in a container, take it into work as a mid afternoon snack.
I’ve made this cake many times and still I always seem to be astounded when it comes out perfectly delicious; I have no idea why!

For this apple spiced loaf cake recipe, you’ll need the following ingredients:
- Plain flour
- Baking powder
- Salt
- Cinnamon
- Rapeseed (or other vegetable) oil
- Buttermilk
- Soft light brown sugar
- Medium eggs
- Vanilla extract
- Apple
- + more cinnamon & caster sugar for topping
I LOVE to keep the apples in chunks for this recipe, no need to worry about them being too firm… it bakes in the oven long enough to get them really soft and juicy. Just make sure you haven’t left them absolutely huge!
Spiced Apple Loaf Cake with Sweet Cinnamon Sugar
Equipment
- Stand mixer with whisk attachment
- Loaf Pan
- Greaseproof Paper for lining loaf pan
Ingredients
- 240 g Plain Flour
- 2 tbsp Baking Powder
- Half tsp Salt
- 1 tbsp Ground Cinnamon
- 120 ml Rapeseed Oil or other vegetable oil
- 255 g Buttermilk
- 180 g Soft Light Brown Sugar
- 2 Medium Eggs
- 2 tsp Vanilla Extract
- 200 g Peeled Apples + additional half apple for decoration (optional)
- 1 tsp Cinnamon for cinnamon sugar
- 1 tbsp Light Brown Caster Sugar for cinnamon sugar
Instructions
- Pre-heat oven to 180 C
- Line loaf pan with baking paper
- Combine caster sugar & cinnamon for 'cinnamon sugar' in a bowl & set aside for later
- Mix your dry ingredients in a bowl: flour, cinnamon, salt and baking powder
- In a stand mixer with the whisk attachment, mix together the light brown sugar and buttermilk to combine
- Slowly drizzle in your oil, with the mixer on, turning the speed to 'high' for 30-60 seconds to allow the oil to combine into the sugar/buttermilk mixture.
- Keep mixing your wet ingredients on low, adding in the eggs & vanilla
- Turn mixer to high for 30 seconds, ensuring all ingredients fully combined
- Combine dry ingredients into wet – stir just enough to combine (don't over-mix here)
- Fold in your chopped apples
- Transfer cake mix to your lined loaf dish
- Slice 1/2 apple thinly (3-4 slices) for decoration
- Add decorative apple slices & cinnamon sugar mix to the top of the load
- Bake for 55 minutes on 180 C
- Remove & transfer to wire rack, allow to cool before slicing
