Coriander and Lime Rice
Delicious and versatile rice recipe with garlic, lime, coriander and onion - so flavourful. It's quick, healthy and easy to pull together.

- 150 g basmati rice well rinsed in cold water
- 225 ml boiling water
- 1 tbsp olive oil
- 1 whole lime Zest & Juice
- 10 g fresh coriander roughly chopped
- 2 cloves garlic grated / minced
- 2 whole shallots finely sliced
- salt & pepper
In your pot, heat the olive oil with garlic and lime zest for roughly 1 minute until fragrant
Add the rinsed rice into the pot and stir it through the oil/ garlic mix. Cook for another minute
Season with salt and pepper
Add 225ml of boiling water to the pan, turn down to a simmer (your absolute lowest stove setting), cover with lid and allow to cook for 9 minutes - do not disturb
When the 9 minutes is up, stir through the rice with a fork, all of the water should have been absorbed into the rice
Mix through the lime juice, coriander and sliced onion
Test for seasoning, add salt/pepper if needed
You can adjust the amount of rice as desired, this method requires a ratio of 1 : 1.5 rice to water.
Keep an eye / nose on the rice while it cooks - everyone's stoves are different. Make sure it's not burning!
