Roughly chop a handful of coriander & stir into mix
Season with salt to taste
Pop in the fridge while you make everything else
Make the guacamole
Finely chop tomatoes (remove seeds)
Finely chop red onion
Roughly chop coriander
Next you'll peel and then smash your avocados in a bowl (the back of a fork will do the job nicely)
Stir through the tomatoes, red onion and coriander
Squeeze in lime juice, season with salt – stir well to combine
Store in the fridge until ready to serve
Prepare the chicken
Combine your spice mix ingredients in a bowl and stir well
Slice your chicken breast into bite-size pieces
Do the same with your peppers and onion
Warm your pan with 1tbsp oil. Once your pan is hot, add sliced chicken. Allow the chicken to get slightly golden in the pan for about 2 minutes
Once the chicken is golden, add the spice mix, 1 tbsp at a time and stir well to coat, add until your desired flavour is achieved (store the rest in an air-tight container for next time)
Allow the chicken to cook through, about 4-5 more minutes
Finishing
Warm your tortillas, according to packet instructions
Serve hot chicken fajitas mix with wraps, lettuce and all of the toppings!
