Quick Cinnamon Brioche French Toast

Ingredients
  

  • 2 whole eggs
  • 80 ml milk (whole)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 4 slices fresh brioche 2 - 2.5cm / 1 inch thick
  • Dash oil or butter for pan frying
  • berries for serving
  • maple syrup for serving

Instructions
 

  • In a bowl, combine eggs, milk, vanilla and cinnamon - stir well
  • Transfers to a flat dish or plate in preparation to soak the bread
  • Slice your loaf of bread into thick pieces (2-2.5cm or just under 1 inch)
  • Soak your slices of bread in the prepared mix, turning over half way through, 1-2 minutes each side
  • Whilst your bread is soaking, get your frying pan ready with a splash of oil or butter - heat to high
  • Transfer each slice of soaked bread to the hot pan, cooking for about 2 minutes on each side until golden
  • Serve with berries and maple syrup!
