Simple Roasted Carrots with Garlic & Thyme

Equipment

  • Baking Tray / Dish
  • Tin Foil

Ingredients
  

  • 400g Carrots
  • 1 Tsp Garlic Powder
  • 1 Handful Fresh Thyme 5 or 6 stems
  • 1 Tbsp Olive Oil
  • 1 Tbsp Water
  • Salt & Pepper

Instructions
 

  • Pre-heat oven to 200C
  • Peel all of your carrots, removing the stem at the top
  • Place carrots on baking dish
  • Drizzle olive oil & sprinkle on garlic powder, salt & pepper
  • Give your tray a good shake to coat the carrots
  • Add in your fresh thyme
  • Pour in water at the side of the tray, so it sits beneath the carrots but doesn't wash the delicious coating off
  • Cover the tray with tin foil and pop in the oven
  • After 25 minutes, remove tin foil from the tray, give the carrots another shake to turn and place back in the oven
  • Allow to cook uncovered for a further 25 minutes, until starting to caramelise

Notes

If you don't have fresh thyme on hand, you can switch out for rosemary instead.
If you don't have garlic powder in the cupboard, you can switch out for a few crushed fresh cloves - leave the skin on so it doesn't burn in the oven.
