One pan easy chicken fajitas – whether you’re looking for a quick midweek meal, a delicious meal prep for office lunches or you need to feed a crowd on Saturday after all of the kids’ activities, we’ve got you covered.
I’ve never met a person that doesn’t like fajitas, they’re so incredibly versatile and can generally be whipped up from store-cupboard and basic fridge ingredients.
We generally made these once a week, after a long day at work when we want something quick but vegetable packed. I always make extra because it makes a fabulous lunch the next day, either served up in a wrap or alongside rice. I promise you don’t need all of the trimmings with your leftovers as the fajitas themselves have so much flavour.
HOW TO MAKE ONE PAN EASY CHICKEN FAJITAS:
What you’ll need:
- 2-3 large chicken breasts (sliced)
- 1 whole onion (white or red, sliced)
- 1.5 whole peppers (use a mix of colour as you like)
- 4 large flour tortillas
- Iceberg lettuce
- Sour cream (optional)
- Tbsp olive oil
For the spice mix:
- 1 Tbsp Garlic powder
- 2 Tbsp Smoked paprika
- 1 Tbsp Ground cumin
- Heaping1 Tbsp Oregano
- 1 Tsp Ground coriander
- 1 Tsp Chilli powder
- A Tsp Salt
For the salsa
- 2x whole tomatoes (seeds removed, diced)
- 1x red onion (diced)
- Bunch fresh coriander
- Juice of 1/2 lime
- Salt
For the guacamole
- 2 ripe avocados
- Half a tomato (seeds removed, diced)
- Half red onion (diced)
- Juice 1/2 lime
- Coriander
STEP BY STEP:
TO PREPARE THE SALSA:
- Finely chop tomatoes (remove seeds)
- Finely chop red onion
- Stir onion & tomato together in a dish
- Juice over 1 lime & stir
- Roughly chop a handful of coriander & stir into mix
- Season with salt to taste
TO PREPARE THE GUACAMOLE:
- Finely chop tomatoes (remove seeds)
- Finely chop red onion
- Roughly chop coriander
- Next you’ll peel and then smash your avocados in a bowl (the back of a fork will do the job nicely)
- Stir through the tomatoes, red onion and coriander
- Squeeze in lime juice, season with salt – stir well to combine
Set aside your prepared salsa and guacamole in the fridge just while you prepare the fajitas!
PREPARE YOUR CHICKEN:
- Combine your spice mix ingredients in a bowl and stir well
- Slice your chicken breast into bite-size pieces
- Do the same with your peppers and onion
- Warm your pan with 1tbsp oil
- Once your pan is hot, add sliced chicken
- Allow the chicken to get slightly golden in the pan for about 2 minutes
- Add the peppers and onion
- Once the chicken is golden, add the spice mix, 1 tbsp at a time and stir well to coat, add until your desired flavour is achieved (store the rest in an air-tight container for next time)
- Allow the chicken to cook through, about 4-5 more minutes
Warm your tortillas according to packet instructions
Serve chicken, lettuce with wraps and toppings!

- Juice 1/2 lime

Guacamole – optional
- 2 ripe avocados

- Half red onion diced
- Juice 1/2 lime

Instructions
