Peanut Butter S’mores Cookie Bars… is there anything on earth that sounds more delicious? An easy, wholesome home bake perfect for Saturday afternoon with the little ones or to bring along to your next gathering.
These cosy little s’mores treats are gooey, chocolatey, slightly chewy and crispy on the top – the perfect indulgence with a hot drink.
I’ve ALWAYS loved brownies, cookies and bars – these all win hands down against any cake in my books, every time. These gooey little s’mores bars are the perfect combination of textures, taking you back to summer evenings by the camp fire toasting marshmallows.
How to make peanut butter s’mores cookie bars:
What you’ll need:
- 2 whole eggs
- 80g salted butter (we’ll turn this into ‘brown butter’ and the weight should reduce to about 60g)
- 200g dark brown sugar
- 1 tbsp vanilla extract
- 100g peanut butter
- 110g plain white flour
- 4 hobnobs (or 60g – crumbled)
- Half tsp bicarbonate soda
- 50g mini marshmallows
- 180g milk chocolate (chopped into chunks)
Method:
Start by preheating your oven to 180C and line a 20cm x 20cm square baking tray with baking paper.
Next, you’ll brown your butter (see this great tutorial here) – generally speaking, you should lose about 20% of the weight of your butter when browning. You’ll start with 80g and should have 60-64g left for baking with!
Allow the browned butter to cool slightly.
Then mix your wet ingredients + sugar together in a large mixing bowl – eggs, sugar, butter, vanilla and peanut butter.
Add your dry ingredients to the wet mixture – flour, hobnobs and bicarbonate of soda.
Once the ingredients are well combined, stir in half of marshmallows and chopped chocolate.
Pour the mixture into the prepared baking tray – It’ll be thick, use a spoon to spread out.
Top the cookie mix with remaining marshmallows and chocolate chunks and pop it into the middle shelf of the pre-heated oven.
Bake for 18-22 minutes (it should still jiggle when you pull it out).
Allow to stand for 20-30 minutes before cutting
