Coriander and lime rice… my absolute favourite rice to make at home to serve with so many of our family favourite recipes.
It’s a quick, easy and healthy rice recipe option that packs so much flavour – garlicky, tangy and zesty! The crunch from the sliced onion really tops of this recipe so I highly suggest you don’t skip that step.
How to make coriander and lime rice:
Ingredients:
- 150g basmati rice, rinsed well under cold water
- 225ml boiling water
- 1 or 2 cloves of garlic, grated
- 1tbsp olive oil
- Zest and juice of 1 lime
- 1 or 2 shallots, sliced thinly
- 10g fresh coriander, roughly chopped
- Salt & papper

This rice is cooked with the absorption method – you need an appropriate sized pot/pan with a lid to ensure it works!
How to cook rice:
- In your pot, heat the olive oil with garlic and lime zest for roughly 1 minute until fragrant
- Add the rinsed rice into the pot and stir it through the oil/ garlic mix. Cook for another minute
- Season with salt and pepper
- Add 225ml of boiling water to the pan, turn down to a simmer (your absolute lowest stove setting), cover with lid and allow to cook for 9 minutes – do not disturb
- When the 9 minutes is up, stir through the rice with a fork, all of the water should have been absorbed into the rice
- Mix through the lime juice, coriander and sliced onion
- Test for seasoning, add salt/pepper if needed
- Serve!
You can adjust the amount of rice as desired, this method requires a ratio of 1 : 1.5 rice to water.
