As the weather starts to turn and we look towards warming breakfasts to keep us satisfied, this one really hits the spot – quickly.
I’m a relatively new convert to the combination of apple and peanut butter. I was always confused when people would eat them together as a snack and rave about how good it was. Now I understand. The sweetness of the apple cuts through the rich peanut butter perfectly. Here i’ve paired it with wholegrain toast, cinnamoney-goodness and an extra bit of pecan crunch.
I do think that the variety of apple matters here… I recommend a pink variety such as Pink Lady or Discovery, for their sweetness.
This recipe comes together so quickly, but you still get the deliciously spiced flavours that are oh-so-recognisable of Autumn. Think apple pie, pumpkin spice and everything else the conjures up cosy-ness at this time of year.

- Wholegrain bread
- Crunchy peanut butter
- Apple
- Cinnamon
- Maple syrup
- Pecans
- Water & pinch of salt
Some notes on this recipe…
I like to slice my apple up pretty thin, leaving the skin on which helps to keep the pieces in shape. You’re not cooking them for long, so keeping them thin helps them to cook through in time, whilst leaving a little juicy bite.
I’ve used crunchy peanut butter by Pip & Nut – it’s my absolute favourite.
You can absolutely switch up the nut butter and the seed/nut sprinkle in this to get a wider variety of flavours and nutrients!

Peanut Butter & Quick Cinnamon Spiced Apple Toast
Equipment
- Toaster
- Chopping Board
- Sharp Knife
- Saucepan
Ingredients
- 1 Whole Eating Apple
- 4 Tbsp Peanut Butter (crunchy)
- 2 Slices Wholegrain/Seeded Bread
- Half Tsp Ground Cinnamon
- 3 Tbsp Water
- 2 Tbsp Maple Syrup
- Pinch Salt
- Handful Chopped Pecans
Instructions
- Firstly, slice your apples thinly with the skin on
- Add water, maple syrup, cinnamon and salt to your saucepan on medium heat
- When you maple mix is warmed up, add your apples
- Allow your apples to simmer for 5-10 minutes (I like mine with a little crunch)
- Roughly chop the nuts
- When your apples are nearly done, pop your toast into the toaster
- When bread is done, smother on some peanut butter
- Top with your cooked apples, drizzle with any remaining sauce
- Sprinkle on your nuts!
