Roasted New Potatoes with Garlic and Thyme! Easy, healthy and meal prep friendly, these crispy potatoes are a great recipe to have on hand for when you’re not feeling inspired to come up with anything else.
They go great alongside any meat / fish and vegetable for a quick dinner recipe, you can toss them into your salad for a hearty lunch or even take them into your next pot luck (these have gone down amazingly well at all of my work functions!).
How to make Roasted New Potatoes with Garlic and Thyme
Ingredients
- 750g new / baby potatoes
- 1tbsp olive oil
- 1tsp garlic powder
- 1tsp dried thyme
- Large pinch sea salt (we like Maldon Sea Salt)
- Freshly cracked black pepper
How to
- Preheat the oven to 180C
- Rinse the potatoes and then cut them in half – leave the skins on to get crispy
- Add the potatoes to a baking dish
- Add olive oil, salt, pepper, thyme and garlic powder to the baking dish and shake / toss with the potatoes until full coated
- Pop the potatoes in your preheated, check them after about 30 minutes and give them a shake up. Return to the oven for a further 15-30 minutes (depending on how crispy you like them)! They’ll definitely be done within 60 minutes.
