Simple cherry tomato and garlic spaghetti… a fresh but filling staple that you can prepare in under 30 minutes. Sweet tomatoes pair with salty parmesan, garlic and basil perfectly – we all know it’s a match made in heaven.
Pasta is my go to comfort food, my stand out favourite meal ever. My love for pasta started young and I fondly remember Saturday nights growing up, heading to the supermarket with my Mum and Sister and we’d always buy pasta for dinner. It was this ritual we had for so many years, that would continue into my adult life… not so much eating it every Saturday, but just regularly enjoying it. The flavours so memorable and delicious.
Juicy sweet tomatoes and basil are the perfect fresh additions to spaghetti to really enjoy the warmer months, without feeling like you’re eating a heavy meal.
How to make simple cherry tomato and garlic spaghetti
What you’ll need:
- 500 g cherry tomatoes – use a mix of yellow/red for extra sweetness
- 4 cloves garlic finely sliced
- 1 tbsp sea salt
- 1 tsp sugar
- 2 tbsp olive oil
- 150 g spaghetti
- handful fresh basil – roughly chopped
- parmesan – grated
How to:
- Firstly, put your skillet onto high heat – use a frying pan if you haven’t got a skillet
- Add the spaghetti to a pot of boiling, salted water – cook according to packet instructions
- Finely slice the garlic while the pan is heating
- When the pan is hot, add tomatoes, garlic, oil, salt and sugar
- Allow to tomatoes to cook, stirring occasionally
- After 10 minutes, or when they start to get soft and split, use the back of a spoon to squish the tomatoes in the pan. Leave a few whole if you like!
- Your pasta should be cooked and drained by now
- Add the pasta directly to your skillet with tomatoes
- Stir to coat the pasta
- Taste, adjusting salt etc. as required to taste
- Top with fresh basil and parmesan to serve
Notes:
- Switch out the spaghetti for any pasta shape you love!
- If you find that the sauce looks dry, reserve some of the pasta cooking water and add this a little at a time until you reach your desired consistency.
- I don’t recommend dry basil for this, the fresh flavour really bring the dish together.
- Don’t skip the sugar, its essential to balance the flavours here.
