Strawberry oat breakfast muffins… slightly sweet, slightly savoury, full of strawberries and perfect for your summer breakfast. Make them in advance and store for your morning commute or lunchbox!
I am ALWAYS on the hunt for breakfast options on the go, working full time with an hour’s commute and very limited time, a meal prep breakfast option is truly ideal. I’ve had these in the works for a while and i’m so happy with how they turned out.
Sweetened naturally with honey, strawberries and jam – these are not your typical muffin.
It’s Sunday morning, you’ve had your coffee and slow morning, it’s time to get some prep done for the week ahead!
How to make strawberry oat breakfast muffins
What you’ll need:
- 250g plain white flour
- 50g rolled oats + tbsp for sprinkling
- Half tsp baking powder
- Half tsp bicarbonate of soda
- 80g olive oil
- 80g runny honey
- 2 whole eggs
- 250g Greek yogurt
- 1 tbsp vanilla extract
- 200g fresh strawberries (hulled & chopped into small pieces)
- 100g strawberry jam
- 1 tbsp sugar for sprinkling
- 1 tsp cinnamon for sprinkling
Makes – 6 large muffins
How to:
- Pre-heat your oven to 180C
- Combine flour, 50g oats, baking powder, bicarbonate soda and stir well
- In a separate bowl, combine olive oil, honey and eggs – stir well. To this mixture, add greek yogurt and vanilla, stir well to combine
- Add wet ingredients to the dry ingredients & stir well – the mixture will be thick!
- Add the strawberries to the muffin mixture and stir
- Dollop spoonfuls of jam into the muffin mixture, roughly stir a spoon through the mixture to spiral the jam loosely through – don’t fully stir to combine as you want little pops of jam throughout
- Pop your muffin cases into a muffin tray
- Equally split the muffin mixture across the 6x cases
- Combine the remaining oats, cinnamon and sugar in a small bowl for the topping – dust it over the top of each muffin before they go into the oven
- Transfer the muffins to the oven
- Cook for 31 minutes
- Remove from the oven, transfer to a wire rack and allow to cool
- It is essential that they’ll allowed to cool completely before removing from muffin cases – otherwise they will fall apart!
